Hing is called Asafoetida in English, it is derived from the Latin for fetid. Those who are well-aware of it, knows about its several usages & benefits but those who are unaccustomed to it, can respond negatively because of its strong aroma, which feels like a mix of sulphur and onions. Europeans call it dung of a devil.
Hing is obtained from the resin of giant fennel plants that grow in wild field in a few parts of the world, most Uzbekistan, Afghanistan, Tajikistan and Iran. The resin of hing can be kept pure but it is mostly consumed after blending, usually in a powdered form or after mixing with some form of wheat. We make available hing in both forms for industrial, domestic and medicinal use.
A pinch of Hing can change the entire taste, flavor and aroma of a giant pot of lentils. When put in a little extra quantity, it can cause bitterness. To avoid this risk, Hing must be used in a blended way, and our recipe definitely takes this risk away.
